Carrot - pumpkin soup

Ingredients 4 persons

  • 15 cl ginger - lemon
  • 15 cl Coconut milk or cream
  • 8 carrots
  • 450 g butternut
  • 2 cloves of garlic and 1 onion
  • 2 litres of water and 2 stock cubes

INSTRUCTIONS

  • Stew the onion, garlic, carrots and pumpkin
  • Add 2 litres of water and the stock
  • Mix everything when the vegetables are soft
  • Finish off with the coconut cream and some coriander if desired
